Veggie Strong


Veggie Strong (approx 16 oz)

1 medium beet
3 sticks of celery
1 cucumber
chunk of ginger 

While I wouldn't recommend you try this as your first juice, I surprised myself by enjoying this juice without any fruit. 

I've been on a veggie heavy kick. I want to be a hardcore veggie juicer!

  1. thanks for sharing. I tried this recipe and thought it was good as well. Kudos. I'm trying to do more veggies too since it's easy to do more than the 20% fruit when making these juices. One of the things I've been worried about with the fast is that without any fats in the diet, that my skin and hair would get a bit dry, so I've started to include a pseudo "smoothie" in the mix. I juice basically the V-8 drink -- tomato, red pepper, carrot, cucumber, celery, chard (I found this leafy green at the farmer's market that has a bit of a peppery flavor), tiny sliver of onion (since it can overpower otherwise) parsley, 1/4 fresh jalapeno and then take the juice, place in a blender with an avocado and add a bit of ground pepper and dash of tabasco. It's like gazpacho in a cup. Yummy and filling at the same time. I'm sure you can do the V-8 without blending in avocado too.
