Kickin Carrot Juice

Simple.
Delicious.
Healthy.



2 large carrots
1 large naval orange
1/2 lime (peeled)
Slice ginger

I will make this one again. Maybe even add some celery.

Why carrots?
-improved vision

  1. Please indulge this question if it's silly, but do you peel carrots, ginger, or beets before juicing them?

    1. I personally do not peel the carrots but I do peel the ginger and the beets. My husband will juice an entire beet, skin on, but it's too earthy of a taste for me. And I know some people who just throw a chunk of ginger straight in the juicer, but I found using a spoon to peel the ginger works great!

  2. Thanks for the response! I spent part of today cleaning out my fridge to make room for all of the fruits and veggies that I bought. Starting tomorrow and can't wait to try out all of these recipes that I'm coming across. So many options! Thanks for sharing your journey!

    1. Oh! I forgot to tell you earlier, I also cut off the very tops of the carrots. I've noticed the tops get kind of mushy and nasty looking and if I wouldn't eat the piece of fruit/veggie due to the condition it is in, my rule is to not juice it.

      My other advice would be to start off small with beets and ginger. When starting out, I didn't really like the taste of ginger....but then after about a week, I grew to love it!! Now I use at least double the amount in my recipes than I used before.

      And limes, limes, limes! They cut through the bitterness of leafy greens. I love to juice them with the peels ON.

  3. I tried this recipe - doubled - and only got like 8 oz of juice....just how big are your carrots and orange?

    1. My oranges are fairly big and if I remember correctly, the carrots were pretty large compared to the carrots I've been buying lately.

      If you aren't getting enough juice, just keep adding carrots and oranges and more lime. Maybe throw in 1-2 sticks of celery?
